Valentin Morel decided to pursue winemaking after studying international law, and found his own path in the Jura. Today, he cultivates 6 hectares with Chardonnay, Savagnin, Pinot Noir, Trousseau, and Poulsard, shaped by Jura soils and minimal intervention in the cellar. On August 5, Valentin will bring his characterful, uncompromisingly honest wines to the Rote Wand, while Jamie Unshelm cooks a multi-course menu to accompany them.
